Where do I adjust this? Every phone is displaying a different time - there’s no rhyme or reason.

Configure the phones (typically, to point to a valid NTP server). Nothing to do with Asterisk.
Can this be adjusted in the GUI for the phones or do I have to reflash with the proper NTP setting?

For Polycoms, the flashed configuration can be updated from the phone keypad. I’ve no knowledge for any other phone.
