I have a centos box with a manually installed asterisk 10.12.2 and FreePBX 2.10.
Is there a way to upgrade asterisk without touching FreePBX?

Usually is safe to upgrade from source if you installed from sourced but in the other hand the FreePBX GUI needs to be compatible with the asterisk version so you better check the FreePBX forums about that.
