These are things that should be done at the point where the signal is originally digitized. I’m not completely sure that amplitude still cannot be changed on SIP, but Asterisk definitely has no subjective noise reduction capability (true noise cannot be removed, but you can make it subjectively less tiring, by, for example, suppressing frequencies that are not carrying speech - the whole hearing aid industry is trying to address that problem).
