When I specify the host in sip.conf, I always get a subnet mask of 255.255.255.255. Is there any way to set the subnet mask explicitly?

Subnet masks only relate to networks - not to hosts. The only subnet mask that makes any sense for a host is 255.255.255.255 . What are you trying to do?
