Is there a way to monitor / record calls from my main asterisk with a second server? I want to install a big storage server to record all incoming calls without the need to buy extra hardware but only the PC.

You can send all calls through the “recording server” to record all calls, or maybe you can use samba and have the files saved on a remote server.

You can set asterisk to accept all calls (no matter what number was dialed), run mixmonitor and then pass the call on to the next phone system. The exact syntax for your dial plan depends on how you will be making the all, the set up of your systems etc.
