IVR during call/conference

Hi,

can anybody tell me if I can set up some sort of IVR/dialtone options during an answered call or conference, and how.

Well what I need is custom IVR during calls that (ideally) executes a extension in my dialplan.

For example two people are talking, and one of them dials 3 and a dialplan extension is processed that starts recording that call.

Again you are not being specific in what you want. You need to explain more. You want some to call and press 3 and record. Ok and then what ?
