As a general purpose, simple softphone: MicroSIP.
For extending desk phone function set: tSIP (call origination, extra BLF console).
Both should work also with Wine.
Linphone - it will do video calls interoperate with all Cisco video phones
As already mentioned microsip and linphone are great, also try and check put https://www.siperb.com/
The problem siperb is it’s in the cloud AND you are stuck paying a monthly fee for it. If you are going to all the trouble to setup an Asterisk system most people are going to run it on prem with no fees (other than electricity and you are going to pay for that whether or not you are running asterisk)

Siperb has two registration modes. With WebSocket registration mode, where you are registering directly with your Asterisk Box - So no proxy at all. And now with the certificate exceptions you can connect to your Asterisk HTTPS port (for wss:// ) with a self-signed certificate.
If you use this option - the Desktop Application only needs internet once, to get the provisioning profile down - then it will work offline.
With regards to fees - this only applies for Group Management over 5, and if you choose to use the sync and storage tools. They are all off by default.

The softphone is now capable of transcoding the WebRTC DTLS-SRTP stream and forwarding it to your PBX as regular RTP. Use WebSocket Registration Mode (Settings → Device).
