There are various types of languages / procedures you can use to write code to work with Asterisk. Asterisk has several different APIs that you can use for general application development (AGI, AMI, call files).
If you’re talking about actually modifying the Asterisk source code, however, you will need to learn a bit of C, as that is the language that it is written in.
