My client has got a strange device that functions by receiving DTMF tones from a remote strange device. However, when they establish a VoIP call through asterisk, when remote device sends dtmf tones, asterisk intercepts them and tries to interprete. How could I disable this behavior?

The only time Asterisk would intercept DTMF during a bridged call is when features are used. Look in features.conf and disable problemic ones or all of them.
