I’m trying to connect with a VoIP provider.They have offered us three servers to connect with one SIP Signaling server and Two Media servers. We are using asterisk 11. what should be sip configure in such scenario?

If you re using chan sip you dont need and neither and you cant specify the remote media server on the sip peer configuration what you define is the signaling server, for example like this
[sip-carrier]
type=peer
host=SIP Signaling server
qualify=yes
disallow=all
allow=codec to be supported by your carrier

Connection/IP address for RTP stream is specify by the remote peer on the SDP, for example like this
