Transitioning from Analog Phones to VOIP

I currently have a few small private businesses that have 2-3 phone lines each using regular analog phone service. They would like to transfer over to VOIP.

What is the recommended way of switching a small sized company over? The company is behind a NAT so I’m guessing there should be some sort of PBX actually on the local network?

How would the company be able to keep the same phone numbers they are currently using with their analog service?
