Scope of "moh_passthrough"

I’m very new to Asterisk, so please bear with me.

I want to set moh_passthrough=yes but I want it to be set for all endpoints – do I need to manually add it to all the endpoints or is there a way to have it set by default on all endpoints?

PJSIP does not do global stuff like chan_sip did. You can either add it to each endpoint, or use a template[1].
