I need to know which RFC show the “CALLERID NAME” ?
I want to know wich caracters are forbidden in CALLERIDNAME
I can imagin that the " and ’ are forbidden but I want to see a text

I would assume RFC 2822. Note that ’ and " are allowed, but they must be quoted properly. Also note that Microsoft Outlook in particular always quotes this field, which goes against the idea that addresses should look right when printed at the top of a memo; the actual rules only require quotes where strictly necessary.
I assume that MIME coding of these fields is permitted, but don’t know the RFC off the top of my head. That would mean that pretty much any printable ISO 10646 character is permitted at the user interface level.
The basic header structure is derived from that of internet email messages.
