I’m using E&M Wink signaling to interface with another system which sends the caller-id info and DNIS separated by a *.
Does anyone recognize that signal type or parameter I can set? Otherwise it seems to be responding as a big long phone number.

Yes, you need to configure it like so:
zaptel.conf:
e&m=1-24
zapata.conf:
signalling=featd
channel => 1-24
This is just the minimum configuration to handle this variant of E&M. Of course you need the span defined in zaptel.conf and whatever other options you want in zapata.conf
